Spicy Chicken Balls with Cashew Satay Sauce

These tasty chicken balls are really popular and a great way to sneak some extra veggies in for the kids (or big kids) in the family! A cashew satay sauce avoids the use of peanuts making this recipe suitable for those with peanut allergies.
Ingredients:
- Chicken mince - 500 g (free-range, organic)
- Red capsicum - 1/2, finely diced
- Carrot - 1, peeled and grated
- Spring onion - 2, thinly sliced
- Lemongrass - 2 teaspoons, finely chopped
- Red Chilli - 1, (long red chilli seeds removed), finely chopped
- Egg - 1 (free-range, organic, biodynamic)
- Chilli paste - 1 teaspoon (gluten free, sugar free)
- Soy Sauce - 1 tablesoon, (gluten free, organic)
- Coriander - 2 tablespoons, chopped
- Cashew nuts - 2 tablespoons, raw or roasted (organic), ground in mortar and pestle
- Coriander roots - 2 teaspoons, chopped
- Garlic - 2 cloves (Australian, organic), chopped
- Chilli paste - 1 teaspoon (gluten free, sugar free)
- Golden eschallot - 1 tablespoon, finely chopped
- Xylitol - 2 teaspoons
- Fish sauce - 1 tablespoon (gluten free, sugar free)
- Coconut Cream - 150 ml (organic)
Instructions:
- In a large non-metallic bowl mix the chicken, capsicum, carrot, spring onion, lemongrass, chilli, chilli paste, soy sauce, and egg together. Mix together well. Roll into small balls.
- Heat a small amount of olive oil in a pan over a medium-high heat. Cook the chicken balls until golden brown all over.
- To make the sauce, pound the garlic and coriander root together in a mortar and pestle. Remove from the mortar and pestle into a frying pan with a little vegetable oil and the chilli paste. Fry over a medium-low heat until fragrant. Add the golden eschallots and fry until clear. Add the fish sauce, xylitol and 1/3 of the coconut cream, when incorporated add another 1/3 of the coconut cream, followed by the last. Stir in the ground cashew nuts and remove from heat.
- Serve the chicken balls with steamed greens or vegetables and the cashew satay sauce.
